This Creamy Mexican Fiesta Mason Jar Salad is bursting with sweet corn, black beans, crisp vegetables, creamy chili lime dressing, and crunchy pepitas for a satisfying vegan lunch. Layered in a mason jar to stay fresh for days, it's an easy, colorful meal prep recipe that's perfect for summer.
Ingredients
Chili Lime Dressing
1/3 Cup Vegan Mayonnaise
Juice of 2 Limes
1 tsp Chili Powder
1/2 tsp Smoked Paprika
1/2 tsp Cumin
1 Garlic Clove, minced
Salt and Pepper
Salad
1 Can Black Beans
2 Cups Corn (fresh, canned or frozen)
1 Red Bell Pepper, diced
1/2 Red Onion, diced
1 Jalapeño, minced (optional, for spice)
4 Cups Chopped Romaine
1/2 Cup Chopped Cilantro
1/2 Cup Roasted Pepitas (optional)
1/2 Cup Vegan Cotija or Feta
1 Avocado (add fresh before serving)

Instructions
Mix dressing. Add dressing to the bottom of the jars.
Layer:
Dressing (Bottom)
Black beans
Corn
Bell pepper
Onion
Jalapeño
Romaine
Cilantro
Pepitas
Vegan cheese (Top).
Place a small folded paper towel on top before closing to draw out any moisture while in the fridge.
Keep refrigerated for up to 5 days.
Add avocado immediately before serving.
Shake well and enjoy.
Serves: Makes 4 Jars
