Hearty sweet potatoes and protein-packed black beans come together in this smoky vegan soup, finished with fresh cilantro and avocado for a flavorful, nourishing, and budget-friendly meal that’s perfect any night of the week.
Ingredients
2 Medium Sweet Potatoes
1 can 15 oz. Black Beans, drained and rinsed
1 Large Onion
1 Bell Pepper
2-3 Garlic Cloves, minced
3 cups Veggie Broth
1 tsp Cumin
1 tsp Chili Powder
1/2 Dried Ancho Chili, chopped (optional for smokiness)
Oil for cooking veggies
Sweet potatoes and black beans are such a comforting duo, and when you add a hint of smokiness, the flavors really come alive. This soup is hearty enough to be a full meal and is packed with protein, fiber, and plant-based goodness. It’s budget-friendly and perfect for meal prep since the flavors only get better the next day. I love serving it with warm tortillas or crusty bread for dipping.
Instructions
Peel and cube the sweet potatoes. Cut onion and bell pepper into bite size pieces.
Sauté the onion, bell pepper and sweet potatoes in a little oil until tender. Add the garlic and spices to the pot and simmer for about 1 minute.
Add the broth and black beans. Simmer about 20–25 minutes until the sweet potatoes are soft and tender.

Option: you can swap out the sweet potatoes for pumpkin or squash.
