Vegan Garlic Chive Drop Biscuits

These vegan garlic chive drop biscuits are light, fluffy, and bursting with fresh flavor! The combination of tender biscuit dough and fragrant chives creates a delightful savory treat perfect for breakfast, brunch, or as a side dish. Made with simple, plant-based ingredients, they come together quickly and easily without the need for rolling or cutting. Enjoy them warm with a smear of vegan butter or alongside your favorite soup or stew!




Ingredients

2 cups All-Purpose Flour

1 Tablespoon Baking Powder

1/2 tsp Baking Soda

1-2 tsp Garlic Powder

1 tsp Salt

1/4 cup Fresh Chives, finely chopped

1/2 cup Vegan Butter, cold and cubed

3/4 cup Unsweetened Plant-Based Milk (such as cashew, almond, or soy)

1 tsp Apple Cider Vinegar or Lemon Juice

1/4 cup Vegan Cheddar Cheese (optional)


Optional Topping

2 Tablespoons Vegan Butter, melted

1/2 tsp Garlic Powder

1 Tablespoon Fresh Chives, finely chopped


Instructions

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.


In a small bowl, combine the plant-based milk and apple cider vinegar or lemon juice. Let it sit for 5 minutes to create a vegan buttermilk.


In a large mixing bowl, whisk together the flour, baking powder, baking soda, garlic powder, and salt.


Stir the chopped chives into the dry mixture. Add the cold, cubed vegan butter and use a pastry cutter or your fingers to mix until the butter is pea-sized and the mixture resembles coarse crumbs.


Gradually pour the vegan buttermilk into the dry mixture, stirring gently with a spatula until just combined. Be careful not to over-mix—the dough should be slightly sticky.


Use a spoon or ice cream scoop to drop generous mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.


Bake for 12-15 minutes, or until the tops are golden brown and the biscuits are cooked through.


While the biscuits are baking make the topping by mixing the melted vegan butter, garlic and chopped chives together. Brush this mixture over the warm biscuits as soon as they come out of the oven for an extra burst of flavor.



Meal Prep Tip: Mix the biscuit batter, scoop onto a lined tray and freeze. After frozen pop in a airtight freezer bag or container. Bake as needed at a later date.

To Bake: play frozen biscuits on a lined baking sheet, allow to thaw for about 5 minute then bake at the above temperature. You will need to add a few more minutes of baking time to ensure the biscuits are fully cooked.
